
I want to wish all my friends and family a happy Thanksgiving and take this time to let you all know how much you mean to me. B and I are having a low key Thanksgiving this year with just the two of us. I do so much commuting as it is that I just really wanted to relax for a few days but the invitations for dinner were greatly appreciated.
B had a feast at school on Tuesday that was very reminiscent of the school Thanksgiving celebrations of my own childhood. Living in a rural area means that the schools have not caught up with the politically correct tides of change. For my California Teaching Permit I am specializing in cultural diversity in early childhood programs so if my professors saw me volunteering at this event I would have had a lot of explaining to do.
I am planning a simple menu for dinner tonight:
-Gardenburger Herb Crusted Cutlets
-Homemade mashed potatoes (I get to try out my new Kitchen Aid Pro Mixer)
-Cornbread and pomegranate stuffing
-Sweet potatoe fries
-Fruit salad
We will probably pick up some dessert in town when we go and see the new Disney movie "BOLT" after dinner.
Here's a picture of the cornbread and pomegranate stuffing that I did a test run on last week. I'll have to post the recipe I came up with by combining a few recipes I found on the internet and then veganizing them because it came out so beautiful and delicious.
